1 tsp baking soda
1 tsp salt
14 oz of sour milk (buttermilk, or whole milk with lemon juice)
1/2 cup dried currents
Oven 425 degrees.
Whisk together the flour, baking soda, and salt in a large bowl. Make a hole in the middle and pour in the buttermilk and stir with your hands JUST until combined, it will be a sticky ball. Add the currents. Too much handling will make it too tough. Shape it into a mound and place in a cast iron skillet or on a cookie sheet and bake for 30 minutes. Make sure you have a lot of soft butter ready!
