1 cup of Green Lentils
1/2 cup of raisins
1 bunch of chopped greens like kale, chard, or beet greens
1 carrot shredded
2 Tbsp EVOO
2 Tbsp. vinegar (whatever you have)
salt and pepper
Rinse the lentils and always pick through them for stones! Add them to a saucepan with 3 cups of water. Bring them babies to a boil and then reduce the heat to a simmer with a lid ajar on top. Simmer for about 15 minutes or until tender when tested. (be careful, they're hot!) Drain and transfer to your prettiest serving dish. Saute the greens just until soft and tender- about 10 minutes and add them to the lentils. Add the remaining ingredients and stir to distribute evenly.
